Ingredients
SALAD:
1 Green onion- finely chopped
1 Mango - chopped
1 Ripe avocado - chopped
1 Red bell pepper - chopped
6 cups Mixed salad greens
2 Tbsp. Fresh mint - chopped
Optional: 1/2 cup of Toasted almonds
2 Tbsp. freshly shredded Asiago cheese
DRESSING:
1 clove Garlic - minced
1/4 cup Granulated sugar
1/4 cup Vegetable oil
1/4 cup Cider or white vinegar
2 Tbsp. Fresh Mint - chopped
Preparation
Dressing: Mix all ingredients together in a small bowl , use a whisk to ensure the sugar dissolves. If there is extra dressing, store in the fridge.
Salad: In a large salad bowl, combine salad greens, green onion, mint, chopped mango, avocado, and red pepper. Add enough dressing to coat the ingredients. Toss.
Optional: Top with toasted nuts and shredded cheese.
