Mint, Mango and Avocado Salad I Ep. 53 I Cooking in the Community Kitchen

Need a quick, fresh, and healthy addition to your meals this week? This Mint Mango Salad is a perfect side-kick to any meal!

Ingredients

SALAD:

  • 1 Green onion- finely chopped

  • 1 Mango - chopped

  • 1 Ripe avocado - chopped

  • 1 Red bell pepper - chopped

  • 6 cups Mixed salad greens

  • 2 Tbsp. Fresh mint - chopped

  • Optional: 1/2 cup of Toasted almonds

  • 2 Tbsp. freshly shredded Asiago cheese

    DRESSING:

  • 1 clove Garlic - minced

  • 1/4 cup Granulated sugar

  • 1/4 cup Vegetable oil

  • 1/4 cup Cider or white vinegar

  • 2 Tbsp. Fresh Mint - chopped

Preparation

Dressing: Mix all ingredients together in a small bowl , use a whisk to ensure the sugar dissolves. If there is extra dressing, store in the fridge.

Salad: In a large salad bowl, combine salad greens, green onion, mint, chopped mango, avocado, and red pepper. Add enough dressing to coat the ingredients. Toss.

Optional: Top with toasted nuts and shredded cheese.
